De Bunnahabhain distilleerderij staat in het noordoosten van het eiland Islay aan het water dat de eilanden Islay en Jura scheidt. De distilleerderij is de meest noordelijk gelegen van het eiland en heeft mooi uitzicht op de "Paps of Jura". Fabio Rossi zag in 1992, dat de liefhebbers wereldwijd de pure maltwhisky's weer begon te ontdekken. Hij richtte Wilson & Morgan op, die zich bezig ging houden met het importeren van uitsluitend de beste maltwhisky's van Schotland, dit uit onvrede over de kwaliteit van de aangeboden whisky's in die tijd. Niet voor niets is de leuze van Fabio Rossi - befaamd oenoloog en afgestudeerd master of wine aan de wijn academie in Conegliano - ga bij het maken van uw keus af op uw eigen smaak en op uw eigen inzicht. Deze zeer fraaie W&M Bunnahabhain 38 years old botteling heeft gerijpt in sherry cask nr. 1, gedistilleerd in 1973 en gebotteld in 2012. alc 41.2%. Er zijn slechts 472 flessen gebotteld.

Bunnahabhain komt uit het Gaelic en betekent " Monding van de rivier". De distilleerderij is gebouwd aan de monding van de Margadele River. De eerste new spirit verliet de distilleerderij in het jaar 1882. Aan de distilleerderij is tot heden weinig veranderd of gemoderniseerd. Men heeft alleen de moutvloeren verwijderd en in 1963 zijn er twee stills bijgekomen. In het stillhouse staan twee wash stills en twee spirit stills. Het zijn betrekkelijk kleine stills en deze worden met stoom verhit. De zes washbacks zijn van Oregon pine. Voor het rijpen van de malts wordt op Bunnahabhain geen specifiek hout gebruikt, om te voorkomen dat die het karakter van de malt te veel beïnvloedt. Er wordt een mix van bourbon, sherry en refill vaten gebruikt. Net zoals alle andere distilleerderijen op Islay betrekt ook Bunnahabhain de mout van de Port Ellen mouterij. Het grote verschil met de andere distilleerderijen op Islay is, dat men op Bunnahabhain de mout niet droogt met turf maar met warme lucht. Zodoende heeft deze Islay malt geen rook- of turfsmaak. Het water om de malt te maken komt uit een waterbron op Margadale Hill gelegen. Het water uit deze bron wordt van grote diepte naar boven gepompt en via een pijpleiding naar de distilleerderij geleid. Dit om te voorkomen dat het water met turf in aanraking komt.

Bunnahabhain 38yo "Sherry wood" butt #1. A very different style of Bunnahabhain compared to the highly successful bottlings of 1968 vintage from last year! While those two were mellow, creamy and delicate, this one is just as exciting but on a spicier and more vibrant profile. At the nose it exhibits just a hint of oakiness, leaving the stage to its flamboyant fruitiness: mango, pineapple, passion fruit, grapefruit… an explosive interplay of sweet and sour, with a touch of organic character. This fruit explosion returns in the mouth, with traces of anise and pepper too. Complex, slightly mineral, pleasantly astringent and tannic, light and rich at the same time… a style which reminds bottlings from decades ago, rarer and rarer to find nowadays.

Color: Gold. A lovely fresh nose, with nice fruit notes, lush tropical fruits, cassis, blackberries, spices and pepper. A hint of gentian which further increases the range of tastes already extensive. A nose of remarkable complexity. All in a very nice balance. A nose that only gives pleasure. If the rest is up we have here is a whisky of exceptional quality.
The same exotic complexity is present in the mouth. Exotic fruits in bulk. A nice fresh acidity, green mango, fruit of Cythera, a hint of gentian, pepper, spices. An explosion of flavors. Absolutely wonderful. Everything is perfectly balanced. A matching nose and mouth like we would like to see more often.
The fun continues with a long lingering finish which is a perfect extension of the mouth.
This is one of the best whiskies I've had the opportunity to drink lately.

Bunnahabhain 38 yo 1973/2012 (41.2%, Wilson & Morgan, sherry butt, cask #1) Colour: amber. Nose: it's the sweetest and the most fragrant within the lot. Sultanas and honey, camphor, liquorice, figs, quinces and then growing notes of juicy ripe Muscat grapes and rose petals. Lovable nose, the one I like best so far. Mouth: yes, beats all the other ones because it's more complex and more delicate at the same time. This time we have tropical fruits (mangos, papayas, bananas), orange blossom water, sultanas, dates and then more roasted nuts. Also touches of honey and again something slightly muscaty. The oak remains below the limits, it's neither tea-ish nor gritty. Finish: medium long, fresh, fruity. Bananas flambéed and tarte tatin. Comments: this one has got something extra: all these tropical fruits. Great freshness and a #1 indeed! ;-) Having said that, it's not very Bunnahabhain, I'd have thought this was rather an old Caperdonich, Glen Grant, Glenrothes or Glenlivet from good refill wood.
